Are you on diet? How about the Ketogenic bread

 


Actually,,,,, What is the Ketogenic???? 

The ketogenic diet is a high-fat, adequate-proteinlow-carbohydrate diet that in medicine is used mainly to treat hard-to-control (refractory) epilepsy in children. The diet forces the body to burn fats rather than carbohydrates. (From Wikipedia)

Then, we would like to introduce the bread made with almond poodles😀
<RECIPE>
White egg (albumen)
2pc
Almond poodles
30g
Powder cheese
5g+ a bit of quantity to put on later
Whey protein

                                   
5g〜8g (less for soft version, more for hard version)

Salt                                                                                                                            a bit 


<Let's Cook!>
1.   Beat the egg whites and salt until stiff, at least 3 minutes, until the meringue puffs up and loses some of its bulk.
!!!! Unlike baking a cake, you make big bubbles, not fine ones.

2. Mix with meringue, almond poodles, powder cheese (5g) and whey protein. 
3. Put the material into the mold (12.5 X 12.5) then make surface smooth. Sprinkle powder cheese on the surface  then drizzle with water then sprinkle powder cheese. 
4. Put into the 150 degree oven 20-25min.

Maritozzo - Japanese way????

 

The Maritozzo is a typical sweet bun of the Lazio region, specifically from Rome.

What a nice looking bread!   I would like to introduce what my friend made it.

Gluten Free - Breakfast Cupcakes with Oatmeal Flour

It's 100% oatmeal, so it's gluten-free and full of fiber!  Are you interested in to make a healthy cup cake? 

<RECIPE>

Dry ingredients

1. 100g oatmeal flour
2. Erythritol 30g
3. 20g coconut sugar
4. 1/2 teaspoon baking powder


Wet ingredients

1. 1 egg
2. 20g butter or Coconut oil
3. 60g milk
4. 1 teaspoon lemon
5. 1 tablespoon honey


<Let's cook!>

Well,,,,, actually it's really easy. 
After mixing all the flour ingredients (Dry ingredients), just add all the Wet ingredients which mixed in a separate bowl before. Baking time is about 20 minutes at 180 degrees.

GYOZA ! Is it easy to make? or Not? -mille-feuille Gyoza -


Off course if you buy a frozen Gyoza at Japanese supermarket or Chinese/Korean supermarket, it's easy to make. But I prefer to make own Gyoza as easy way!

<RECIPE>
1. flour: 300 g
2. Water: 150 cc
3. Minced meat: 400g
4. Green onions (or chives): about 1 bunch
5. Ginger (finely chopped or grated): I added this: about a big spoonful
6. Sesame oil: about a big spoonful
7. A pinch of salt and pepper

<Let's make!>

1.  mix with flower and water and leave (min 1h)
2. mix No.3 to 7 
3. make a Gyoza skin as below. thickness about 2-3mm
4. then put Gyoza material on the skin then cut as below Yellow line
5. then bending
6. then push a little bit that Gyoza becomes 1 - 1.5cm.  (never mind if more than 1.5cm, you should cook more)
7. then grill

Sake lotion to your skin ? - Summer is coming soon -


 I wonder if western people use moisture lotion every day. At least I don't see much lotion in supermarkets or pharmacies in Belgium.

SO, what I am doing right now is making own lotion. Well.... actually I have been making my own lotion with sake and yuzu since decade. Even my mother, who taught me how to make it, has been making her own lotion for a long time. 

My own lotion is quite simple. Prepare sake (cheap sake is OK) and cut yuzu into 4 pieces in a big bottle. After about 6 months, transfer them to a small bottle and start using! If you have it, you can add some serum or glycerin (small amount) . 

In Belgium, I cannot find Yuzu.  So I googled for yuzu substitutes and came up with "yuzu = fragrant citrus = sudachi, kabosu, lime, etc" ! I can't get sudachi, kabosu, , but I can get lime!

Then, I am trying with Lime to make my own moisture lotion😀

'EAU CELLULAIRE' Actually, this is also good moisture lotion what I tried.

Do you know Ça va ?

 


'Mackerel' in Japanese, same pronunciation as 'Ça va'. 

Last time when I back to Japan, I found very funny ' can' as above picture. 

Off course there are different tastes of mackerel inside the can but not other thing you can find from the can. 

Ça va? is How are you? How's doing? so, not like funny stuff come out when open the can 😋

Well, the taste was good and not only funny design.

SAKURA - Cherry blossom - start in Japan

 Spring is a very very lovely season 

in Japan


Spring is the time to start a new year in Japan and I feel the Sakura celebrate us to start school, office, etc. 
Actually in Europe, school start from Sep but not in Japan. 

I received a lovely video  (Sakura Tunnel)  that made my heart skip a beat and would like to share with you.

Bread Japanese Style - Yami style

 

What do I miss in Japan?  I miss Japanese style bread sometimes.  I think Japanese style bread has a more variety to eat at lunch. For example kind of salty side dish (or main dish) is in the bread. curry, meat, sausage, bacon, etc 

If you live in Germany, USA, China, Singapore,,,,, you can find a Japanese style bread shop but not in Belgium. so, some of the people start to make Japanese style bread during the COVID shutdown. 

and me? Yes, I also learn from my friend and start to make it as lunch bread! Thanks to Google and Youtube!

Are you on diet ? then try chocolate mousse with Tofu

 


This is probably not the classic chocolate mouse recipe but very good for diet.  You cannot really taste that the tofu is in it !

If you are on a diet, this is the perfect recipe when you want something sweet. No sugar (erythritol is 0 calorie), no guilt and rich in protein !


How to make (3 small cups)

  • Dark chocolate       75g
  • Soft Tofu                150g
  • Espresso                 TBS 1
  • Rum                        TBS 1
  • Sugar (Erythritol)    50g

You can use any type of sugar, I am on diet so using Erythritol :)


  1.  Put tofu in a bowl
  2. Use blender to make it smooth
  3. Add sugar, espresso, Rum and mix till smooth.
  4. Melt the chocolate slowly in a double boiler over simmering water.
  5. Add tofu mix to melted chocolate little by little.

Hinamatsuri - Girl's day


3 March is a Girl's day in Japan (Hinamatsuri)
This is a traditional event for Girls to celebrate and to wish child's health and decorate traditional dolls. 
And this dolls should put away by 3 March. I don't know if it's true or not, but my mother used to say 'if we don't put away by 3 March, you will missed to get married 😨'

Off course it was really important for most of the people to get married at that time.... (yes, it was already more than 20years ago....)

Currently, I believe the meaning of this event is changing and just celebrate to wish your child's health or opportunity to eat quite cake , etc. 

So cute cake which my friends made it!

Sukiyaki Don (Gyu Don = Beef Don) - where you can buy thin meat in Brussels?

 

Have you ever tried 'Gyu Don (or Sukiyaki Don) ?   

'Sukiyaki' is a one of the traditional dish in Japan (below picture) and using 'Gyu = Beef' , leek (Poireau) and Tofu as basic.

'Don' means rice-bowl dish which you can put kind of whatever on top of the rice. 
so, if you put 'Sashimi' on top of the rice .... become 'Sashimi Don'
put 'Pork ginger wok' .... become 'Pork ginger Don', etc.

Where you can get the thin meat is in Ixelles meat shop or Chinese super market is below....... and Onion!
  

*** if you cannot find a Mirin, never mind!  you can replace to sugar. 
if no Sake? never mind! you can replace to white dry wine.

Japanese BENTO - do you know BENTO?

I think BENTO (= Lunch box in Japanese) style in Belgium and Japan are totally difference. For example, my kids are bringing below European style Bento most of the day..... well.... until they find out Japanese bento is cool to bring 💗 


When our kids are really young, they didn't like to bring Japanese style Bento because too different and use Nori (seaweed) which is weird for other kids. 
BUT thanks to fashion style which is ASIAN culture become fashion!!!  Especially easing 'Sushi' is really fashionable, my kids start to ask me to make a Japanese Bento which make me really happy 😍😍😍
I like Japanese Bento which has more variety and more different food in it and good for health. 
off course, it is a lot of work for Mon to prepare. But but but...... this is one of the LOVE to my kids.

Sashimi / Sushi in BXL - let's try Japanese food

 

Do you like Japanese food?  Do you love Japanese food? 

 I LOVE Japanese food😍 Especially Sashimi 😋

Especially Sashimi with Cold dry White wine or Sake is the best!

My favorite Sushi shop in Belgium is located in Uccle ' Le Cap du Vivier D'oie' which has a Japanese chef to make a Sashimi. 

Actually, the photo above is for 'Temaki' and I ordered as 'Sashimi for Temaki'.
